Day Sixty Eight

Delicious, homemade Eggplant Parmesan
This picture does not do this dish justice! 
I made this with fresh eggplant and basil from the farmer's market.  Plus, a simple tomato sauce and fresh mozzarella.  It was so good!!

  1. We prepared a variation on your roasted veggies tonight. Now I'm really wanting to find some eggplant for this dish. Looks so yummy!
